It is a name day celebration for all women named Mary, Maria, or Marie; the most often used names given to females throughout history among Christian women.

- l 2 teaspoons Diamond Crystal kosher salt (for table salt, use 1 teaspoon)
- l 1/4 cup (60g) fresh juice from about 2 lemons, divided
- l 1/4 cup (60g) ice water, divided
- l 3 cups (600g) neutral oil, such as grapeseed or canola, divided
